Egg Dumplings

Description:


Fresh, egg dumplings, as an alternative for an in-between snack.

ingredients:

  • 2 tablespoons butter
  • 4 eggs (for egg mix to finish)
  • Salt
  • Pepper
  • 1 handful of herbs (fresh, for sprinkling; chives, parsley, etc.)

For Dumpling Dough:
  • 300 g flour (fine)
  • 3 eggs
  • 150-200 ml of milk (depending on the consistency of the dough)
  • 60 g butter
  • 1 pinch of nutmeg (freshly grated)
  • 1 pinch of salt
  • 1 pinch of pepper

Preparation:


For the egg dumplings, beat the eggs and melt the butter. Add butter, eggs with milk, flour, a pinch of salt and nutmeg, mix well into a paste.

Boil salt water and press dough mass through a spaetzlesieve, then cook the dumplings and until they rise to the surface. Splash with cold water, so they do not stick together. Wash herbs and chop finely.

Melt the butter in a large pan and turn the dumplings in it. Whisk the eggs and quickly stir-in until the yolkthickens a little, but not too dry.

Salt and pepper the egg dumplings and serve them sprinkled with herbs.
