EGG-BEER SOUP

Description:


Beef broth with egg and Altbier, a sensation for the palate.

ingredients:

  • 1/2 l Altbier
  • 1/2 litre beef stock
  • Salt
  • Pepper
  • 100 ml cream
  • 4 egg yolks
  • 4 egg whites
  • Parsley

Preparation:


“ALTBIER” Top fermented German, dark beer : As predecessor of lager, the Altbier fermented at higher temperatures and using yeast surface, as the ales, but aging occurs at lower temperatures, such as lager it’s a light beer, malt, bitter and it’s colour ranges from copper to dark brown or amber.
 

For egg-beer soup, put “Altbier” beer, beef broth, salt and pepper in a saucepan, boil rapidly and leave. Whisk together egg yolks and cream. Take the soup from the heat and thicken with the egg-cream mixture.Garnish with parsley and flakes from stiffly beaten egg whites.

It is most sufficient to enjoyit with toasted white bread.
